Hi Sean, I bought the full size griddle in Novemberish last year, and I've used it a whole bunch since. Things I like about it: - it sits closer to the burners than if you're using a plancha on top of your griddles, so it gets hotter faster - you need very little oil to cook on it and the non stick properties are lasting well, even with metal utensils - because it covers the whole grill space, it's easy to move stuff around - the grease channels at the back work well and dump stuff to the drip tray - lots of grab space for when swapping it out with the regular grates - Easy to clean, and doesn't transfer flavours between cooks. Although I still keep the right half mainly for non-meat products. My dream setup would be half the grill on a griddle and half on grates, but I found the plancha solution to take ages to get hot enough, and then lose too much heat with the lid open. So I wouldn't get that great crust on the second side of my smash burgers. I use this for everything except sausages and spatchcock chickens at the moment. With a reverse sear steak, you don't need the grill lines, so it can sit here during the warming part, get held in foil while you crank the heat up, then get seared and crusted on here. Eggs, smash burgers, flapjacks all work great.
