“A beautiful piece of very delicate meat. I cooked it off the bone but only just, as per a Nick Nairn recipe. I chopped the bones and meat scraps and used for a fabulously rich sauce. Expensive for the quantity of meat but worth it for a special occasion. My 2 guests are in the restaurant business and we're blown away.”
