“Bless you, Fish Society, for stocking my favourite fish, which has proved impossible to find elsewhere. There was a time when a certain high street freezer food chain actually stocked it, but those days are gone, and I was on a very long waiting list for arctic char from another supplier. When the e-mail from FS dropped, I went into a feeding frenzy and ordered right away, and the fillets didn't disappoint. Arctic char has all the best points of salmon and trout in one package – silky and tasty, but in a manageable size for people like me with overstuffed freezers where whole salmon have to be bent a bit. Its skin is easily the best to pan-fry – somehow it's puffier and crisper than salmon skin, like a thin sheet of heavenly pork scratchings. I hope arctic char makes a regular appearance from now on.”
