Bought the red mullet heads and they made the most crazy insane delicious stock. I roasted them first for about half an hour. Then added them to a pot with some carrots, celery, shallots and fennel sautéed in butter, and a large swig of Cinzano. Cooked on low for a couple of hours then strained through a bag. Vivid red colour and incredible taste that needs no seasoning. Will be using as a base for for Thai soup.

Did not nail these to the wall as trophies, use them to illustrate gas exchange in gills, or commit unnatural acts with them -- however, did make a superb fish curry with them. Excellent value for money, highly recommended.

If we can have the option to help cutting the fish head into 2 pieces, that will be fantastic

Live your heroes and buy a swordfish head. Don Vito Corleone? Leave it in someone's bed. Alfred Hitchcock? Leave it in the shower. It'll be a long time until your missus has such damp underwear. Then bury it in the compost heap: Robert Graves "Earth to Earth". After that think Freddy Forsyth "The Emperor" and mount it on your wall. You need one in your life.
