“I love these herrings. I lived in The Hague for a while years ago, and got to like them there, buying them from street stalls - which are not as common now as they used to be. I think they are one of the finest foods there are, a kind of Dutch sushi. To be eaten with raw chopped onions. Even having been frozen, they are really good - delicate and fresh-tasting.”
