“although i like all my fish to be ocean caught ,in these times where the ocean can not support demand we have to look at farmed fish.this is the best farmed bream ive had ,not to be confused with the tasteless old fish often found in your local supermaket”

“I baked this in a foil packet after a marinade in a Chinese/Asian style sauce with the cavity stuffed with garlic & herbs. The fish was very well cleaned & trimmed of fins and it was good to find the gills had also been removed which is not always the case (as they impart a bitter flavour).”
