“It’s not possible to risk cooking fish this good (and expensive!?) without a probe! Thankfully the fish always arrive perfectly frozen and as such end up the best flakes of perfectly cooked cod. We’ve served them on a bed of tomato/chorizo orzo with chargrilled peppers and black olives and salad. Delicious.”

“Arrived frozen. Left to defrost overnight in the fridge. Then used them to make the 3-day miso-marinated black code (via Nobu recipe). Turned out as well as I've eaten in the restaurant. Excellent quality fish.”
