Good morning Jean The reason why some of the mussels remain closed after reheating is because they are dead and cannot feel the heat. Live mussels open when you cook them because they are trying to cool down. For those mussels which remain closed after reheating, a flick with a blunt knife will open them. Ours are pasteurised and are 100% safe to eat. You can find this information on our product page on our website. Kind regards The Fish Society

“I've tried both offerings Irish & Spanish. Irish were good a bit salty but I'll adjust next time Spanish-quite a lot of broken shells but larger and very good taste”
