“Melt-in-the-mouth but extremely expensive. This is a great sushi cut but literally four times the price for only slightly (but noticeable!) difference in taste. Don't even think about this if you're planning on cooking the salmon, I'd even say it isn't worth it for sushi. As it says, this is *sashimi* grade. Anything else would be a waste of the cut and a waste of money IMHO.”
