good - very good - scallops - I really don't think the freshly delivered ones from my fishmongers are genuinely better. (Terrible thing to say, but true.) A bit of a tale - I have a first class fishmonger, (part of a wonderful fish restaurant) at the end of my road, 100 yards away, who advises, cleans, fillets, skins etc - all over the phone (I trust them except the portions are always a little too large - better than the opposite) delivered to my front door for no extra charge. I love cooking fish (because hardly need to do anything - just fitfully toss and observe) and cook on the table, on an electric conduction hob (not as fierce as I'd like it to be though 220 W) a la japonaise - lived in Japan a bit, and certain things stuck) So I can keep a fish restaurant provided locally running in my home 5 nights a week. And throughout weekends buying wisely from Fish Society. (Look on the Fish Society website and read a super-intelligent discussion of freezing vs. fresh that will change your mind about frozen fish. Spankingly fresh marvellous in the van from Brixham every Tues to Sat, of course, but in the hold for a few days....better frozen on the spot within a few minutes of coming out of the sea - the slightest loss of something, but so slight, can't remember how to describe it.) SO why do I need Fish Society having almost a gold medallist, helpful, charming fishmonger only 100 yards from my front door? Daily morning deliveries from Devon Because you sell and deliver perfectly frozen fish - I only use my fishmonger for Tuesdays to Fridays, sometimes Saturdays - so hoard of sashimi grade fish and lobsters, crabs, even lobster thermidor kits (marvellous - hardly any skilful cooking needed) clams, prawns, even soft shelled crabs, Uni (sea urchin roe that is said to smell of violets - I'm an addict, though expensive) whole lobsters, crabs etc etc (and yes - we do tempura also on the table, but the 220 W ring could be a bit hotter - just have to take small amounts at a time.) But as hopeless hostess, I just rabbit on, sipping wine, whlst my noble guests Can continue talking to the the chef/friend that cooks. Then there are the bags of shucked oysters, scallops - some on shells, some not, but also quite cheaply can buy the scallop roes - the bright pink bits - which I think rather subtle and very cheap. Can't understand why some don't want the roe - if nothing else, visually stunning.) and oysters and sea urchin roe (love Uni) and more . Even bought a rice cooker, small, so appropriate for 2 or 3 sushi guests. So a friend of a friend living in my basement here and I and he cook dinner 4 consecutive days of the week - so that's why we enjoy your services so much. Not just that I could ignore local fish (driven up from Brixham in Devon every morning - they're serious) but then your spankingly vibrant frozen fish for other days of the week, 24 hours from order to delivery or less, from you. (No room in freezer for chips, but have bought a small air fryer - not yet used for veg - which will make a difference. It does many things, including dehydrating - just done a batch of fresh quinces - sore mouth, boring medical reasons,, so can't eat fresh fruit, but dehydrated - wow - crispiness goes of course, but the flavour there, even concentrated. A pleasant experience.). So although housebound, I have a rather wonderful show on the road, thanks to amazing friends, to local fishmonger (***** for them) and Fish Society (also ***** of course). Instead of being an invalid who can't eat much (but high quality By George! - eat more when serious cooking afoot.) Life very much worth living.
