“We were supposed to be in New Zealand this year, so obviously that didn't happen. I researched what food and drink we might have had, and recreated dishes as best I could. Hoki isn't easily available, but it is a member of the hake family, so I ordered these to make this recipe. It was beautiful, the texture suited the recipe really well.
