“The whitebait arrived frozen solid. The instructions advised that it could be fried in that state in small batches straight into hot oil (180 F). Few of us have a means to check the temperature of half an inch of oil in a frying pan. When I did this there was a minor explosion of the oil which flew in all directions not only splattering the wall tiles behind the cooker but on my face and shirt. Fortunately, I was wearing spectacles. Hot fat on the cornea of the eye could be very serious. I speak as a medical doctor. The next time I thawed the fish, then shook them in a plastic bag with flour and paprika and checked the temperature of the oil with small bits of bread. I think the instructions on the bag of whitebait should be amended.”
