It's best to remove them after cooking but before serving. Otherwise treat it like its cousins - cook it similarly. Ling fillets are part of our everyday fish range - excellent value for money and very versatile. It can be served very traditionally, with some fresh steamed greens and potatoes. Ling has a wonderful sweet flavour and firm texture. We often source our ling from UK waters, this cut 'the fillet steak' is a meaty piece cut from the fillet near the head of the fish.
