“Made the madras recently with slow cooked spiced lamb shoulder and then added to the gravy made fresh the next day. Just a few tweaks here and there but it was probably the best madras i have ever made. Having a go at the tex chilli this weekend, made with chuck and shin beef cuts, slow cooked, looking forward to it, will definitely be trying some more in the near future, thanks”
