The 300 snare side head is thinner than the 500 and better for hearing clear ghost notes, the 500 is more durable with a slightly deeper tone but not as sensitive as the 300. I just switch heads around depending on what sound I want to get. The room you set up you acoustic drums will have a massive effect on the sound you hear. Acoustic drums will also sound different out front to what you hear when playing. If you damp a drum too much they might sound ok for recording but like cardboard boxes live. How you play and tune your drum and your stick choice will alter the sound too.

I ordered the Hazy but the delivered head was a 300 Clear. I needed the head pronto so can accept that but ....the package (an S hoop and the head in it's Evans box) was fairly well covered with bubble wrap but was not in a carton / box - just a taped up brown paper parcel. Inevitably this had been crushed in transit. The S Hoop survived ok but the Evans box was flat and the head's shoulders were pressed in. Luckily the collar was still round and flat. Under tension the head resumed proper shape. Luckily.
