“Wow.. what a specimen this was. I had never seen one this size, but then only ever got from the supermarket before and the quality was completely different. Absolutely delicious with pancakes veggies.”

“Halved it. Placed in SousVide bag with Hoisin sauce and Chinese 5 Spice. Cooked at 90C for 5 hours. Drained juices. Resealed and kept in fridge overnight - enhances flavour. Into oven - fan 200C until crisp. Shred serve with rice etc etc. Sauce from juices. Amazing. Will finish cook the second half which is all cooked and waiting in the freezer for later this week. A big thank you to the Duck and Pipers Farm.”
