“One of our favourites. Score and còm on low heat to render fat? Then slow cook, covered, with small amount carrot onion star anice orange peel and a little port or sherry, and small amount of stock (made with pipers chicken carcass!) for 1 1/2 hours at 140 fan.”

“These are one of my favourites from Pipers .With long slow cooking the meat is just so tender and tasty.In my mind better than breast meat.”
