“A reminder of what real cheese should taste like. Two problems with that: it’s hard to go back to the ordinary, every day processed variety after tasting mature clothbound cheddar and it does not last long long in our house. With a slice of sourdough bread and a spoonful of sauerkraut, it’s a meal in itself.”
