Rosie, my greyhound, has had pancreatitis and needs rabbit which is now easily and safe to obtain without the worry of poisons deliberately place in wild populations.

I took a bit of a gamble on this as I've never roasted a rabbit before. (Cooked it almost every other way imaginable but always in some form of stew/casserole. - Grew up on a lot of wild rabbit and determining the age wasn't always easy so tended never to roast.) I wanted to do a roast for easter but my mother in law doesen't really eat any meat other than game so decided to risk roasting it. I added a fair bit of fat inside and then wrapped the whole thing in several rashers of streaky and roasted it for (what felt like) quite a short amount of time and it was an absolute success! Will certainly do again. (although a friend yesterday told me they'd recently had confit rabbit legs which were fantastic so that might be the next experiment!)

I grew up in the country and often had wild rabbit as as kid. This is just as I remember it and was utterly delicious. On a side note I bought it to share with my Mother-in-Law who really isn't all that keen on meat but loves game! (She was evacuated to Oxford when she was a child during WW2 They ate a lot of home-reared rabbit as it was one of the few meats available.) She loved it too!
