Hello Steven, Thank you for your comments. As for being less or more hot, this really does depend on the batch of chillis we receive for production. Since our ingredients are freshly picked and natural, there are some heat variations from session to session. So you may find that the next batch you buy could be a little hotter, or even cooler. However, it is broadly the same level as I have always cooked while growing up in Thailand and while living in the UK. However, if I want it hotter, I just add more paste and that does it for us. You could also try adding a couple extra fresh chillis while cooking. Jum
