I used it to make 24 portions of Chicken mussanman curry for a special take out Thai box and all my customers messaged me back and said how good the curry was and my husband who loves this curry agreed.

I use 2 tablespoons of veg oil as I find the coconut oil too creamy.1 tin of coconut milk and add brown sugar a little at a time to bring the flavours out until you get the desired taste.I used chicken I cooked before hand, onions, peppers, little sweetcorns then i add to the curry sauce.Lovely medium curry and I also use the yellow curry with same ingredients.Lovely Currys.

Hello Shirley, thank you for leaving your feedback and lovely review. I do that too. I'll be honest, sometimes I don't use any extra oil at all if I am using a good quality coconut milk (e.g. Aroy-D). What I do is take off some of the solid or thick part of the coconut milk (without mixing it), and I used this to "fry" the paste. I do so until the natural coconut oil in the coconut milk starts to split out slightly, then I continue with the recipe. This gives the dish a nice sheen and is the way most Thais go about it. but it takes longer than frying in some veg oil. Just my little tip too. Jum

At least as good as my favourite Thai restaurant. Used whole pack on a reduced quantity of sauce and the flavour was full-on. Better result than the currently unavailable paste from my supermarket. Will definitely re-order.

Excellent flavours, was concerned it being vegan would affect the taste, but non of spot on flavour, heat and ease of use, even a recipe on the pack!

Hello Stuart, and thank you for leaving your lovely review. I am glad that the Vegan bit didn't put you off from trying our paste. Thailand is unfortunately not big in veganism, but Thai pastes have so much flavour, that I'm glad it is available to everyone, which is why we had it registered with the Vegan Society. What is important to note is that our pastes are not Vegan for the sake of being Vegan, they are Vegan because that's the best and preferred way it's bought by locals in Thai markets. Some do add shrimp to the paste, but I would never buy curry paste with shrimp paste already added; I prefer to add what I need depending on what other ingredients I'm using, to get the balance right. Shrimp paste is a traditional ingredient in Thai curries, but I'm using less these days. I hate the idea of such a pungent ingredient being added to otherwise fresh herbs and spices and then sealed into a pouch for months on end. Nope, not for me. Our paste, is just a blend of herbs and spices, with some salt as a preservative; but with absolutely nothing else added. Vegan or not, that is how it should be, and the proof is in the flavours that everyone can enjoy. Sorry for the long reply. Jum

Was very tasty if I had one suggestion to make it would be the inclusion of a separate bag of dry spices that can added. I added dry red chillies and star anise which adds to the taste and is also visually appealing. Some of the other brands do this and include coconut milk as well but I don’t like the coconut milk they use so I don’t think you need to include this. I’ll try your other curry pastes soon!

Thank you Daniel for leaving us a review, we are always so grateful for people taking the time to give us feedback. We do hope to provide "kits", that customers can buy with other ingredients, but for the moment, we are focusing on making sure that my paste recipes are hitting the mark. I absolutely agree with you on the coconut milk, there are so many out there, and most are really not that good. My basic rule of thumb is if the ingredients state "Coconut extract and Water" ONLY, then it's probably OK. Anything else on the list, best stay away. Finally, adding garnish in the form of dry red chilli and star anise is a great idea, but best to add towards the end of cooking because I have tried to balance the favours of star anise, clove, nutmeg and mace within the paste. If I was making the paste by hand, I would not add star anise and clove in the paste, but add it whole while cooking, to achieve the same balance. But then again, food and taste is about how it makes you feel, so there is no right or wrong way, just enjoy the experience, that is all I can hope for. Sorry for the long reply. Jum

Made from the most amazing range of herbs and spices the smell when you open the pack is just fantastic. Very speedy delivery, lovely packaging and delicious recipe ideas. I love the multi pack idea - a great gift , or to share with family and friends as so easy to post on a pack in an envelope yourself . The Massaman is our family favourite using strips of Sirloin steak to make it even faster

After years of searching for ‘that taste’ we've finally found it in Mae Jim’s paste! Combining this with some beef I cooked for 24 hrs sous vide literally blew people’s minds! Deep, rich, with undertones of heady nutmeg and star anise, this is now going to be my go to when I need ‘that taste of Thailand day out on the steps of a beach bungalow’
