Our family have been farming at Gazegill for about 500 years and as current custodians our responsibility to continue farming in a sustainable and nature led way is very important. We have always believed that nature is never wrong and farming organically produces healthier food from happier animals within a sound ecological system. Happy, healthy animals make better food with a traditional flavour. The rare and traditional breeds that we keep are better suited to the organic system and are slowly grown, this ensures a longevity of life based around a natural approach to farming. We love them to bits, they are our extended family.

“I have been blown away by how the milk curdled after adding apple cider vinegar to make cottage cheese. The milk made a compacted white mass in the pan, similar to the melting mozzarella texture. Got around 700 grams of cheese that will last a week. The whey mixed with the vinegar is delicious. I will drink protein while cleansing my kidneys and burning fat. I can not make this type of cheese with milk from the supermarket. Not a pinch of salt or funny stuff. I cover the cheese with cold-pressed organic olive oil and place it in the fridge to cool overnight. At almost £4 a bottle is money well spent, and for as long I can afford it, will never buy other milk. What's not to love about this milk? Just wish a had a bigger fridge-freezer. Thanks”
