Hi there Kuldip, We are at the end of the current crop year Oct 2021-Oct 2022 and this is why some of the walnuts are a little bitter. Walnuts are particularly troublesome at this time of year due to the volatile oils in them. New crop of walnuts will be with us very shortly. I hope that the next batch of organic walnuts that you order will be more to your liking.
