Organic white peppercorns are hotter and spicier
The differences in white peppercorns and black peppercorns is not just in the colour. White peppercorns are from the same plant as the black variety (Piper Nigrum) but they are left to ripen and then their skin is removed.
White pepper is much hotter and spicier than the black variety. Black pepper has a richer more complex earthy flavour.
White pepper is often preferred in dishes where you dont want the black specs of black pepper showing up. White pepper is very popular in French and Chinese cooking.
Organic white peppercorns can be added straight to meals whole if you like a punch. For a more even flavour you can grind them freshly in a pestle and mortar or grinder.
