Our sustainably farmed Scottish smoked salmon is hand-cured and smoked at the Severn & Wye Smokery on the edge of the Royal Forest of Dean. This is a traditional smokery where they chip all their own oak wood, which gives the salmon a unique distinctive taste. It is rich in omega-3, potassium, selenium and B vitamins as well as being ethically sourced and RSPCA-accredited. We love it in a creamy pasta with fresh dill and lemon zest for a touch of luxury! We follow the Marine Conservation Society’s guidelines on salmon sustainability, which ask that we don’t fish wild salmon to protect precarious wild stocks. Our farmed salmon is instead handled by the farmers at Loch Duart in the beautiful Scottish village of Scourie. They share our views on animal welfare, so do everything possible to recreate a natural habitat for their fish. These were a false economy for me. I eat a lot of smoked fish, including salmon, but I didn't like these trims at all. I had hoped they'd be an economical way to buy some smoked salmon but the trims came with lots of grey flesh, lots of very thick pieces that were chewy and tough, and it was over-smoked and over-salted. Really unpleasant.

Hi there, Thank you for your feedback and sorry to hear you didn't enjoy the Smoked Salmon Trims as much as you had hoped to. This colouring you mention is normal for the trims as the brown or grayish meat is a natural layer of fat that lies between the skin and flesh in salmon and other oily fish – it is where the highest deposits of omega 3 fatty acids are. It’s the layer that the salmon uses to insulate itself, and is absolutely safe to eat. Some salmon trims will have slightly more of the greyish flesh because they have been trimmed from the skin after filleting – this will cause some variation. Delicious and affordable smoked salmon. Only complaint is that the trims are no longer thin strips, sometimes can be chunky pieces.

Normally salmon trims are excellent but these were grey in colour and looked more like scrapings than trimmings
