“My mother used to cook meals with shin beef from the local butcher, when I were a lad in Hebden Bridge, Yorkshire, some 60 years ago. I have never forgotton the taste! Over the years, as an adult, I have bought supermarket shin beef, in order to try to replicate her recipes & that taste. I have always failed. However, you have restored my faith in shin beef at last - this is "proper" shin beef, thick cut and with whole pieces of meat - not the mishmash of bits from different animals, that I bought from the supermarkets time & time again. I turned the shin beef into some French dish that my wife (who is from London and has never tasted shin beef in her life), requsted - beef bourguignon. Wow! Just Wow! Perfection on a plate (that's down to your shin beef rather than my cooking). My next order of shin beef will introduce her to Meat and Potato Pie - proper food! Thank you Farmison.”
