Perfect in chunks for making carbonara or sliced to wrap round chipolatas for pigs in blankets. Vastly superior to supermarket pancetta.

Beautiful flavour, and enough fat to cook out on its own in a pan . Used a third of it so far in a spaghetti carbonara, yes I know it's meant to be guincale but this is so good I don't care! Simply delicious

Perfect flavour and ideal for either slicing thinly, as I did to wrap around chipolatas, or cutting more chunkily for ragout or carbonara.

The pancetta was good but the ripon catherdral gammon was terrible. Such a disappointment after last year was so good. It was sinuey and was really unpleasant to eat as ham, i had to disguise it in a soup.

The real deal. Dry and dark. I've used it finely chopped as a tasty addition to bolognese sauce, also sliced, fried and added (including the fat) to Spanish-style rice with seafood adding texture and flavour. Great.
