I love making broth from these bones, knowing how nutritious they are. I roast the carcasses first, pull off all the meat ( and eat it !) if I want to make a purer bone broth. Slow simmered for 12-24 hours.

Roasted then simmered in water for 3 hours followed by boiling the defatted stock until heavily reduced for freezer storage. Delicious. Used to make chicken broth soups.
