St Ives Gin made from a list of 13 botanicals. It is not a distilled gin but a cold compounded gin which is a method that dates back to the 16th century. They take the finest grain spirit and then steep the variously botanicals seperatley for 24 to 36 hours, these seperate compounds are then blended together to achieve the desired flavour and style. The gin has a pale yellow colour from the locally sourced Gorse flower with top notes of lemon citrus and juniper. The palate is smooth with citrus ortange peel , floral and juniper followed by hints of coconut husk. The special blend of 13 unique botanicals gather from the local Cornish coastline, cottage garden and clifftop are bought together to create Cornwalls first small batch cold compound gin. The secret alchemy of fresh herbs and hand foraged local botanicals create a sea breeze aroma, individual taste and unique golden hue that we and you will love.
