This flour is a lovely cross between wholemeal and modern white flours. It is excellent for long fermentation, rustic pain-de-campagne style breads and yields superb results with regard to flavour, crumb and volume. I keep buying it (when it is available) and it keeps delivering tasty loaves every time.

I really wanted to love this flour, because of its pedigree as a product of regenerative farming. It smells absolutely wonderful and imparts a lovely golden colour to the bread. But, for me at least, I found it lacked elasticity and strength and my sourdough bread was dense as a result. Despite repeated kneading and a very long fermentation period, the dough was underdeveloped and tore (no windowpane!). In order not to waste it (I'd bought 5 bags!), I've used it 50:50 with some very strong Canadian flour (tut tut). It won't put me off Cotswold flour, but I won't risk the regenerative flour again, sadly.

I'm getting good results from this flour. Used it for sourdough, naan bread and loaves using fresh yeast. Taste, texture and colour all very good.Glad I tried this flour and I think it may well be my go to flour for the future.
