This makes the best ever loaf of bread, tricky to get the balance quite right (in a bread machine) but well worth trying. The higher level of moisture in the bread means that toast is fantastic.

Cannot beat Matthews Cotswold Flour. Use this Spelt for most of my routine loaves. It makes a wonderful loaf and never fails.

Having successfully used white spelt flour for quite a while I’ve had disappointing results with this flour. First loaf in breadmaker was a disaster, seemed to have collapsed. Second loaf in breadmaker, had to rescue by putting in extra flour & yeast. Even then wasn’t of usual standard. Then tried new cake recipe , edible but fell to pieces but had no other versions to compare it with. Then made loaf & rolls using oven . Not up to usual standard . Made a focaccia & that seemed ok. So not sure what to make of this flour. I’m not new to baking or non wheat flours.

I use this mixed in 59/50 with the 8 grain flour and it makes delicious light and crispy bread. I also make all my cakes with this flour now, couldn't be without it.

I use this flour for both bread and pizza dough, having tried a number of different flours. This provides consistently high outcomes that you can feel whilst baking and taste once baked. The ease of ordering via the website and the speed of delivery are also to be commended.
