I produced two fantastic Ciabatta loves last week the day after it arrived,. Result: 9 out of 10. My family said, " now that's a loaf !". The first one was devoured in minutes, the second one sliced and put into the freezer.

Really enjoy baking with this flour although yet to crack a perfect baguette with it - definitely down to my ability and not the flour which still makes a lovely loaf.

Really pleased with my French flour and with the French sticks I've produced. Much better than using the usual strong white flour. And very well packed and delivery is excellent. Will definitely use it again.

Matthews French Bread Flour T55 makes the best French baguettes. This is wonderful flour - it makes the best baguettes! Excellent flavour and lovely crisp crust - I highly recommend it.

I have been baking 27 years in a variety of countries, using a wide range of available bread flours. The T55 from Mathews is way up there with the best and now a personal favourite. If used to using normal strong bread flour it might help to reduce hydration by 5% to 10% and increase proving time, but its always good to experiment. The T55 is a great flour, producing a light crispy crust and wonderful soft and airy crumb. I find it ideal for baguette, French loaves, and ciabatta and can be combined with other flours for a wide range of breads so a winner for me.
