Made a couple of small sourdough loaves with half churchill white - half emmer. The flavour of the bread has been ideal to have buttered then topped with a slice of cheddar, some bits of walnut and a little honey. Very luxurious - I felt a little bit guilty for enjoying it so much! However, it does taste a bit strange with Marmite on... It's honey that goes with it best. I'm looking forward to making more, and especially to try with some smoked salmon leftovers during Christmas. It's a real treat and thankyou to all involved in producing this rather special ancient variety.

Once we had found a suitable recipe for using the Emmer in a bread maker (on another website), we have made some very good bread. It is a good texture without the heaviness of a traditional wholemeal but does need to have Churchill White as a companion.

This flour has a grainy texture and tastes of seeds. I use a bread machine and this flour needs to be blended so as not to produce a brick. I find adding 10% white flour works.

I have purchased from Matthews before and the experience this time was as good as ever. Easy to navigate website, speedy delivery and of course an excellent product. The flour is all it was cracked up to be and the Pane di Patate I made with it was delicious. Currently have some "normal" sourdough on the go with 50% Emmer, 50% strong white. Thank you all at Matthews.
