This is an excellent flour for blending with weaker U.K. wholemeal and heritage flours. I use it at 20% bakers to get really good hight volume loaves with these flours. It's high protein content enables substantial increases in dough hydration.

Matthew’s Canadian flour is excellent for baking my sourdough bread. From the very start of kneading the dough through to the wonderful flavour and texture of the finished loaf, it is highly recommended. It was disappointing to discover it not available for reordering once again.

Been bread baking for a while and have liked to try different flours as the choice of flour makes a huge difference. I am not changing in the future as this is the best bread flour. Needs slightly more water than some flours, more kneading and more patience to rise but the outcome is really good in terms of look, feel and taste. Once restrictions are lifted would be interested in ordering a mixed box of 5 flours as some of the others that you stock look interesting.

Wonderful flour perfect for all bread including sourdough. I used it to make a sourdough starter and it's been amazing. I keep it in the fridge and only have to feed it every couple of weeks, using the half I remove to bake with - so no waste!

This flour has revolutionised my sourdough bread baking. I struggled to get my dough to behave like the YouTube videos I was watching then switched to this flour and the difference was startling. The high protein content is what makes the difference and the flour is more absorbent so the 75% hydration dough is much easier to shape. I sometimes mix 50/50 with the strong white bread flour for a softer crumb.
