Along with the Churchill bread flour I use this spelt in all my bread doughs at a ratio of, 20% spelt 30% white and 50% flavoured bread flour. This spelt flour helps to make the finished loaf lighter and brings out the flavour.

I love this flour and do not use anything else. It is so beautifully light and gives good results. Delivery from Matthews is always quick and the flour is very well packaged.

The flour itself is fine but every loaf I make is too dry and crumbles, end up having to toast it most of the time. I stopped using my bread maker and started using my stand mixer but I’m still having the same problem. I need to use a different recipe from the one on the pack I think because that one doesn’t work for me.

We started using this flour a few years ago as we had heard white spelt is very good for people who struggle to digest modern wheat. My husband is NOT a coeliac however he does follow a gluten free diet, due to not being able to tolerate modern wheat flour. This flour is outstanding we now use it as our ‘go to’ flour for the whole family. It makes lovely bread, pastry, batter, cakes and biscuits. I usually make a loaf a week in our bread maker. It really is a delicious and high quality flour.

This is the best spelt flour from Matthews. I use it for all my baking, my sister who is modern wheat intolerant, loves my bread and regularly takes a couple of loaves away home with her. I have tried the spelt and rye flour and she is ok with that, so I will get it in my next order. Thanks

I have been using Matthews Cotswold white spelt flour for years now. My husband cannot each ordinary flour but he can eat spelt flour as it is easily digested. I use the flour to make bread, biscuits, pasty, cakes and anything else where flour is needed. It is excellent. The service is excellent. The flour is delivered well packaged. It has a good shelf life.
