This is the absolute nicest flour I’ve ever used. It’s smooth as silk and makes wonderful sourdough. I’m gluten intolerant but this flour, along with the slow fermentation of the sourdough process, produces a proper, strong, structurally perfect sourdough loaf. I’m eating real bread for the first time in 28 years, and loving it.
