I want 100% Organic British wheat, milled to flour in Britain. I'd like to think this flour fits the bill. I've got so sick of the misleading labels that's on food these days. For example a Union Jack which only means it's a British company, or foreign grain milled in the uk. I have seen a few like that. I'd like to think Matthews Organic Plain flour is 100% British organic grain & flour. So why is this at the bottom right of the package?: GB ORG 02 UK/NON-UK Agriculture. I bake a lot of bread, and this flour is very good indeed for light and fluffy white bread. 500ml of flour and 100ml of vital wheat gluten, 3 desert spoons of olive oil, just a pinch of salt, and 2 & 1/2 desert spoons of sugar. Oh yes it's good, and it rises a lot higher than other flour so you get a bigger loaf, or you can use less flour. :)

The reason I bought it was because I was misleading by the product description that it contains only organic wheat. When it arrived, I was disappointed to see that it is fortified just like any other flour brands. The flour itself is good but I will not purchase again.

I discovered Mathews Cotswold flour during the pandemic and now find that I cannot consider returning to my old brand. The flour has a really fine texture and the resulting scones and biscuits are a triumph. I would recommend without hesitation and am definitely a repeat customer. I also use white and brown bread flour with equal success. All round a fantastic product and a very happy customer. I just wished I lived closer to the mill.
