I use a proportion of 40:30 Churchill White / Cotswold Crunch at it makes a wonderful loaf with good structure and excellent flavour.

Ordered this (and a few others) to test out as a replacement for my usual flour. ( sadly the mill has recently closed) Produced what could possibly be the best sourdough I have made so far. Will definitely be buying again, and again. . .Just wish it came in maybe a 3kg or 5 kg bag - please?
