When I made a loaf just with this flour the flavour was rich and nutty, but the texture of the crumb was very soft. However, I now use it in various combinations with other Matthews flours - spelt, white, 8 grain, emmer - and it adds an extra dimension to the flavour of the loaf, quite unlike anything else. Well worth using.

Bibury Barley is a unique stoneground flour, available from nowhere else but Matthew’s. It has a wonderful nutty taste. I like to add it to the blend of flours when I’m baking my bread. We always buy it when ordering a flour box from Matthew’s.
