We've designed this class for someone new to Kamado cooking, or thinking of taking the step into this style of BBQing. Perhaps you have a Kamado but don't feel that you are getting the most from it? We'll use a Junior Kamado Joe, a Classic II Kamado Joe, a Konnected Kamado Joe, a Big Joe III and a Large B*stard Kamado. This CORE SKILLS class is Hands-On, so that you can get involved in both the preparation and cooking, if you choose to, and lasts about 4 Hours. It is lead by Jack from @jacksmeatshack who is part of the Kamado Joe Firesquad and has a wealth of expertise across the Kamado range. We will take you through fire & temperature management, indirect, direct & smoking methods for perfecting your BBQ skills. It will be a friendly, intimate class where you can watch a Kamado expert in action, ask questions, and be well-fed and watered throughout - you eat everything that is cooked, or take it home with you! The following specifics will be covered during the course; Establishing your fire Maintaining a constant cooking temperature - understanding the airlflow and mastering the air vents Utilising the heat deflector plates - should I go direct or indirect, down low or on the top? How to smoke on a Kamado - how to create clean smoke - different types of smoking wood, and how to use them Joetisserie cooking - how to build your fire for rotisserie cooking Different cooking surfaces - what are all these surfaces for? How to apply bbq rubs and sauces to maximise flavour onto your food How to shutdown your Kamado when you are finished cooking  And Jack will show you how to cook the following menu items, depending on fresh product availability; Chicken Wings Reverse Seared Pork Chops Rotisserie Rib of Beef Smash Burgers Salmon with Bourbon Honey Glaze Fire roasted Chimichurri and for dessert...Smoked Pineapple, Mint Sugar and Ice Cream The course will be held in our undercover purpose built BBQ area just outside of Hitchin, Hertfordshire SG4 7HD so come rain or shine you'll be sure to have a cracking day. Please note, Jack will be cooking across a range of Kamado-style grills - if you'd like to see a specific Kamado in action, please contact us in advance and we can see if this can be accommodated.
