Our Rubia Gallega rump joint is cut from the D-cap of the rump, perfect for a memorable centrepiece with ample marbling and succulent flavours. Sourced exclusively from 6-8 year old Rubia Gallega herds reared in the great outdoors, this joint is matured for up to 35 days in our dedicated dry aging room. Each joint serves up to 6-8 people and weighs approximately 2.2Kg. To cook, serve with a glass of good red wine, roast potatoes and make a proper gravy from the pan juices. The joint will be delivered frozen, vac pac and on ice pads. Store in the freezer if not using straight away.
