WHAT IS SUCKLING PIG? Our Suckling Pigs come from Segovia, the heart of traditional suckling pig production. Unlike many commercially reared pigs, our piglets remain with their mothers for up to 21 days where they are entirely milk fed. This produces meat with the finest texture and flavour, meat of incomparable flavour and succulence with melt-in-the-mouth crackling. Our pigs carry the 'Cochinillo de Segovia' seal of approval which guarantees you’re getting the real deal in terms of origin, birth and breeding method. WHAT CUT IS THE SUCKLING PIG RACK? The rack is the best-end including the loin and ribs, excluding the legs. HOW DO I COOK A SUCKLING PIG RACK? Suckling pig rack can be roasted, grilled or barbecued. To roast place skin side down in a pre-heated oven 180°C/350°F/Gas Mark 4 for 30mins and then turn so that the rack is skin side up for a further 30mins until the skin is a wonderful, thin crisp. HOW WILL I RECIEVE MY SUCKLING PIG RACK? You will receive one frozen vac pac of suckling pig rack delivered on ice pads. If you are not using the suckling pig straight away, store in the freezer. If you are, then you will need to thaw it in the fridge for at least 24 hours before cooking. PLEASE NOTE THAT WEIGHTS CAN VARY FROM SUCKLING PIG RACK TO SUCKLING PIG RACK, SO EXPECT A SLIGHT VARIATION ON THE THE WEIGHT OF YOUR SUCKLING PIG RACK.

One of the things I look forward to when visiting Spain is the cochinillo, this is the firt time I have had tho opportunity to buy and cook it myself. The meat was beautiful and we really enjoyed it. The service and delivery were great too. I didn't manage to get the crackling done just right so I obviously need practice so I am ordering some more!

There was only enough meat for one on this rack, most of which looked like ribs with very little meat on. Another unfortunate character was that the freezing process seems to have and adverse effect on any crackling you might expect. I started mine as they suggest for 10 minutes, then turned it down to 140c till it was cooked right through, then blasting the heat up for the crackling which did not work. It’s a pity that suckling pig cannot be bought fresh. Tasted nice what there was, but no edible crackling that I love so much.
