WHAT IS GALICIAN BEEF? At Basco, we only source the highest quality beef from Galicia in the Northwest of Spain. Our Galician beef fillet comes from retired dairy cows between 8 and 12 years old. This type of ageing allows more natural grass-fed marbling of the beef so that its comparable to the marbling of genetically optimised grain-fed US, Japanese and generic Wagyu beef. These older cows are chubbier animals, have a higher percentage fat content and as such have more marbling, giving the fillet a distinct and unique flavour. All our galician fillets are dry-aged for a minimum of 7 days. WHAT IS GALICIAN FILLET? Also known as Filet Mignon, Tenderloin, and the Eye Fillet, this is the most sought-after Galician beef cut, prized for its tender quality. Our Whole Galician fillet is lean, mean, and amazingly tender which will melt in the mouth. Low in fat, but rich in flavour when cooked, this is a Rolls Royce of Galician beef, that can be enjoyed by either cooking it as steaks or roasting as a whole piece. HOW TO COOK A GALICIAN FILLET? The perfect way to cook and serve a Galician Fillet Steak is to bring the fillet to room temperature-for at least 6 hours. Cut the fillet steak into 3-inch thick medallions and salt both sides of the steak with some rock salt 30 minutes before cooking. Cook the steak on charcoal barcecue for 4 minutes on each side, allow to rest for 2 minutes in a warm place. To serve the steak, slice thinly accross, season with salt flakes and serve on a warm plate or platter. HOW WILL I RECEIVE MY GALICIAN FILLET? PLEASE NOTE THAT WEIGHTS CAN VARY FROM FILLET TO FILLET SO EXPECT A SLIGHT VARIATION ON THE WEIGHT OF YOUR GALICIAN STEAK.

Very efficient delivery with ice packs to keep it fresh. The Beef was as described and made some lovely good size steaks when cut. Very tender and full of taste. Will be ordering again as I can't see this order lasting too long.

As rich and as smooth as butter, delicious flavour , we would never have tried dairy beef had we not seen it being used in a spanish restaurant on tv , curious we bought the Galician fillet which on offer at £69 is incredible value. We have already purchased another and are wondering why British dairy cows arent used to their full potential in this way ?

Wow, unbelievably tender, melts in the mouth and unlike many fillets it is really flavoursome. I usually go for rib eye for flavour, but was delighted with this and will definitely buy again. You can see the quality in the marbling and it does not disappoint! I cut it into thick 200g steaks and served rare with béarnaise sauce - fantastic!

This Galician beef fillet arrived on time and we opened-up a well wrapped chilled fillet of beef. We cut up this beautiful tender fillet into steaks which we vacuum packed and added to the freezer, keeping two steaks for cooking that night. And Wow what a tender and tasty piece of beef I've never experienced before and Thank goodness there's more in the freezer!! Thank you very much for that

The most delicious fillet I have ever had. Excellent value for really quality meat. I divide mine up and freeze what I am not going to use straight away and it works really well. Excellent product and really good service. Thank you!!

The best fillet beef I’ve tasted. Usually cut the middle out for chateaubriande and grill the ends another night but this time I put it on the BBQ and it went down well with the family. Great product at a fab Tuesday price.
