WHAT IS PRESA IBERICA? Presa Iberica is a meat cut from the Iberico pork attached to the shoulder, and located near the head of the loin. Presa Iberica is a very tender well marbled cut that can be prepared quickly over a hot pan. Due to its location, it possesses qualities of both the shoulder and loin. Presa is a beautiful, flavourful cut of pork that melts in your mouth - we call it the other red meat! Grilled medium rare, it has a juicy, tender bite and a full mouthwatering flavour that speaks of its free-range acorn fed source. Presa is a thick shoulder steak unlike any other. It is thick and juicy, but leaner than pluma end loin or the secreto flank steak. Iberico pork comes from free-range Iberico pigs indigenous to Spain. They live an ideal life rooting for acorns under cork and holm oak trees. Their diet provides a complex flavour and a fat that literally melts in your mouth. The exercise provides the beautiful marbling that distinguishes Iberico pork from any other. HOW TO COOK PRESA IBERICA? Our favourite way to prepare this incredible pork is to season with salt and pepper and grill or sear the presa, then cook at medium high heat until done. The centre of the steak should still be pink. This cut has less fat than other types of Iberico pork, so be careful not to overcook. Let it rest for 5 minutes, then cut thin slices to best enjoy the flavour. HOW WILL I RECEIVE MY PRESA IBERICA? You will receive one frozen vac pac of presa steak delivered on ice pads. If you are not using the presa straight away, store in the freezer. If you are, then you will need to thaw it in the fridge for at least 24 hours before cooking. PLEASE NOTE THAT WEIGHTS CAN VARY FROM PRESA TO PRESA, SO EXPECT A SLIGHT VARIATION ON THE THE WEIGHT OF YOUR PRESA IBERICA.

I first ate this cut, Presa Iberica pork, at a restaurant and remembered it being excellent. Wanting to try preparing it myself I found a couple of on-line suppliers deciding to try Basco. Having seen the delivery options I choose Standard delivery. I received the Presa Iberica pork quicker than I thought which was a nice surprise. We ate the meat last evening as part of a celebratory birthday meal for four and I received extremely good feedback. I prepared the meat simply 1.25 kg goes a long way and so have some to cook tonight! I am very pleased with my purchase and I think that the quality of meat for the price is excellent. I will no doubt purchase again from Basco and definitely recommend them. DM

I ordered 2kg of Presa Iberica and it turned out to be 2.7kg when I received it. Thank you for the extra bonus. Though there was a minor issue of delivery schedule, its worth the waiting. I have always been a great supporter of Spanish meat and this is the first time I ordered from Basco. I have to admit that the quality is supreme. I bought something similar from another supplier but not as good as the one I ordered from Basco. I cooked the Presa Iberica with different methods including slicing & blanching, dicing & shallow frying and grilling. No matter which method I use, the meat is still tender and full of flavour. I will definitely recommend Basco to my friends.

My order arrived within a 24 hour time slot and was frozen so could be transferred to the freezer or thawed out for use. The meat was delicious and all you would expect from Iberico pork. I will certainly use them again.

Overall an excellent product, tried Iberica at one of Michel Rouxs Jr’s. restaurants a few months ago and was mightily impressed, this product matched those earlier experiences. Only criticism I have is the size of the product. Would have preferred it in about 500gram joints. As it comes frozen smaller sizes would be better appreciated and I would have given 5 stars *****

This is a great piece of meat. It can be prepared slow as sous vide, or seared pink. Either way, the flavour of the fat and texture of meat is great and great value when the 25% offer is on.
