WHAT IS SECRETO IBERICO? Secreto Iberico is a part of the top extreme of the loin's top. In the traditional quartering of meat it is united to the loin's fat or 'hoja de tocino'. Sizzle this thin cut on the grill and the fat will immediately start to melt away, bathing the pork in lovely acorn flavoured juiciness. Iberico pork is famed for its beautiful marbling and no other cut displays this more deliciously than the secreto. While it comes from the shoulder area, it has a lot of similarities to a tender skirt steak. Indigenous black Iberico pigs wander the dehesa forests of southwest Spain feeding on herbs, grasses and most importantly, acorns. Not only are they the happiest pigs on earth, but this diet adds wonderful flavour to the pork. And all that exercise fosters the marbling that makes Iberico so special. The acorn and herb flavored pork is high in mono-unsaturated fats that melt at low temperatures, and is more healthy than the fat from normal pork. The secreto has so much marbling it has a bit of a bacon-like flavor, but much more complex because of the grasses, herbs and acorns on which the animals are grazed. The secreto cut is a small, thin cut that is hard to locate on the pigs, hence the name. It should be grilled or cooked in a cast iron skillet at medium high heat. HOW WILL I RECEIVE MY SECRETO IBERICO? You will receive one frozen vac pac of secreto iberico delivered on ice pads. If you are not using the secreto straight away, store in the freezer. If you are, then you will need to thaw it in the fridge for at least 24 hours before cooking. PLEASE NOTE THAT WEIGHTS CAN VARY FROM SECRETO TO SECRETO, SO EXPECT A SLIGHT VARIATION ON THE THE WEIGHT OF YOUR SECRETO IBERICO.

I ordered these for some Christmas cooking fun, so they are yet to be cooked, but the package arrived very promptly and perfectly cool so I could pop them straight back into the freezer. The quality looks superb

I think this is the tastiest cut, make sure to cook it rare, the taste is unbelievable.

Just had another order delivered and as usual quality excellent, delivery on time, and customer care fantastic. We have bought from Basco several times, would recommend to anyone and are always happy we found this supplier, brings back lots of happy memories from our visits to Spain.

The pork was delicious and very tender. I was a little disappointed that it came in three pieces rather than a single joint (hence only four stars) as it made it slightly difficult to judge how long to cook it to ensure the meat was not under/over cooked. As a take on patatas bravas, I fried up some of the cooking chorizo with some diced potatoes and used Javier's recipe and method to make a tortilla. Everyone agreed that everything was delicious and is hoping that it will be repeated in the not too distant future.

The texture was still the same good - after a light grill it melted in the mouth. However the smell of roasted pork wasn't as strong as before. Maybe just this batch, will try again later.

I cooked 5kg of this on the BBQ for a party, used a little bit of olive oil, plenty of rock salt and some chopped oregano, then cooked 4-5min a side on medium heat... Absolutely delicious!! Highly recommend it. (service/delivery good as always)
