WHAT IS ABANICO IBERICO? Abanico Iberico is the part that wraps the Iberico ribs from the outside. It is a thin piece, very marbled, which makes it the perfect Iberian pork cut to cook on the barbecue producing tasty, juicy and crispy slices of delicious pork. The name of this cut comes from its fan shape, resembling a Spanish hand fan that women use. Indigenous black Iberico pigs wander the dehesa forests of southwest Spain feeding on herbs, grasses and most importantly, acorns. Not only are they the happiest pigs on earth, but this diet adds wonderful flavour to the pork. And all that exercise fosters the marbling that makes Iberico so special. The acorn and herb flavoured pork is high in mono-unsaturated fats that melt at low temperatures and is more healthy than the fat from normal pork. Abanico has so much marbling it has a bit of a bacon-like flavour, but much more complex because of the grasses, herbs and acorns on which the animals are grazed. It should be grilled or cooked in a cast iron skillet at medium high heat. HOW WILL I RECEIVE MY ABANICO IBERICO? You will receive one frozen vac pac of abanico iberico delivered on ice pads. If you are not using the abanico straight away, store in the freezer. If you are, then you will need to thaw it in the fridge for at least 24 hours before cooking. PLEASE NOTE THAT WEIGHTS CAN VARY FROM ABANICO TO ABANICO, SO EXPECT A SLIGHT VARIATION ON THE WEIGHT OF YOUR ABANICO IBERICO.

Once again we had the excellent Abanico Ibérico from Basco,superb delivery service within a couple of days of ordering it. I bbq it at the weekend,just rubbed in some good olive oil and seasoned it. Had the bbq going with some good lump wood charcoal and up to a high temperature 200c Seared the pork quickly on both sides and put it on the cooler side of the bbq for about 3 minutes per side so that it was nicely caramelised on both sides and then let it rest for around 5 minutes. Sliced and served with corn on the cob,hassleback new potatoes,mushrooms done in butter garlic and chilli all cooked on the bbq.Plus a side salad and a good Rioja .

Th Abanico is a well marbled cut of pork, we cooked it over coals on skewers, it was full of flavour and surprisingly tender for the area of the pig that it comes from. Highly recommended.

Just received my Ibanico Iberico Pork, as delicious as I had in Spain, cooked on the barbecue with a bit of olive oil and salt, there is no finer tasting piece of meat. Worth paying for.

Quite possibly the single most delicious cut of meat I've tasted in 2018. I will be purchasing this product each time I order from Basco. Perfect for the BBQ and cook to medium rare at the most. On a cost to taste ratio probably the best deal you can find anywhere!

We recently had our second order from Basco.This was the abanico and secreto iberico pork.Both were delicious.They were marbled with more fat but when cooked pink they had a rich buttery taste with a crisp exterior .Would highly recommend both. Our only problem now is whether we prefer these or the presa,which was in our last order!!
