WHAT IS COCHINILLO? When it comes to roast whole suckling pig, there is no finer meat in the world than the traditional Spanish Cochinillo. ORDERING YOUR WHOLE SUCKLING PIG You do not need to be a master chef to create a dish to die for when you use one of our prime piglets. Each one will arrive at your door ready to roast in the oven, allowing you to relax and look forward to the feast ahead. You will receive one frozen whole suckling pig, delivered on ice pads. If you are not using it straight away, store in the freezer. If you are, then you will need to thaw it in the fridge for at least 24 hours before cooking. HOW BIG IS THE WHOLE SUCKLING PIG? Each whole suckling pig weighs between 4 and 5 kilos and measures between 45-50cm in length, so don't worry, it will fit in any conventional oven. DEFROSTING YOUR SUCKLING PIG Place your whole suckling pig in the refrigerator to begin the thawing process. After a couple of hours, you will be able to remove the packaging and allow the suckling pig to defrost at a temperature between 2-4º C, for 12 to 24 hours.
