WHAT IS COCHINILLO? When it comes to roast whole suckling pig, there is no finer meat in the world than the traditional Spanish Cochinillo. The soft and tender meat literally melts in the mouth whilst the crispy crackling will delight the senses with every forkful of this incredible delicacy. Unlike many of the commercially reared animals that you will find elsewhere, our whole suckling pigs are always kept with their mothers up to a maximum of 21 days. This is the only farming method that stays true to the traditional practices from which the name suckling pig was derived. Keeping things natural also delivers meat with the finest flavour and texture. ORDERING YOUR WHOLE SUCKLING PIG You do not need to be a master chef to create a dish to die for when you use one of our prime piglets. Each one will arrive at your door ready to roast in the oven, allowing you to relax and look forward to the feast ahead. You will receive one frozen whole suckling pig, delivered on ice pads. If you are not using it straight away, store in the freezer. If you are, then you will need to thaw it in the fridge for at least 24 hours before cooking. HOW BIG IS THE WHOLE SUCKLING PIG? Each whole suckling pig weighs between 4 and 5 kilos and measures between 45-50cm in length, so don't worry, it will fit in any conventional oven. DEFROSTING YOUR SUCKLING PIG Place your whole suckling pig in the refrigerator to begin the thawing process. After a couple of hours, you will be able to remove the packaging and allow the suckling pig to defrost at a temperature between 2-4º C, for 12 to 24 hours. Allow the suckling pig to reach room temperature for 2 hours before cooking. Cook in a pre-heated oven 180°C/350°F/Gas Mark 4 for 3 hours. SERVING YOUR SUCKLING PIG Serve your roasted suckling pig with a glass of quality red wine, such as our Valduero Una Cepa from Ribera del Duero, some roast potatoes, seasonal vegetables and make some real gravy with some stock and scrapping the pan juices created during roasting. The quality of the whole suckling pig and the boneless suckling pig was excellent and the entire service from getting an initial query answered by telephone and then placing an order via the website through to delivery was 1st class. This was my first time cooking suckling pig and I followed the simple recipe on the site for cooking it traditional style (butterflied) and it was very tasty, with crispy crackling and tender juicy meat. Next time I think I will try cooking it on the rotisserie to compare cooking methods - any excuse to have it again!

The whole suckling pig was well parcelled and chilled in transit. Delivery was prompt. The product was in excellent condition looking good ,well cleaned internally and externally. We were very pleased. It was delicious after barbecuing on a rotisserie .Thank you ! Highly recommended .At £81 with discount it was a reasonable price too.

the whole experience was great. from ordering to delivery (parcel force down to 1 hour window). the pig was amazing, my husband cooked it on a big green egg, we followed the website's instructions and butterflied the pig before cooking. Skin was crispy and it was enough for 10 adults plus sides.

Absolutely superb. Beautifully clean and melt in the mouth delicious. I followed the Matt Tebutt recipe and the result was amazing. Crispy skin and melt in the mouth flesh. I will always get my suckling pig from BASCO - cannot recommend highly enough - FAB-U-LOUS!!!!!!!!!!

The pig arrived exactly when I requested it to arrive and was really well packed. The instructions on the website as to how to cook it were spot, I was a little nervous but following the directions meant it was cooked to perfection.
