WHAT IS COCHINILLO? When it comes to roast whole suckling pig, there is no finer meat in the world than the traditional Spanish Cochinillo. The soft and tender meat literally melts in the mouth whilst the crispy crackling will delight the senses with every forkful of this incredible delicacy. Unlike many of the commercially reared animals that you will find elsewhere, our whole suckling pigs are always kept with their mothers up to a maximum of 21 days. This is the only farming method that stays true to the traditional practices from which the name suckling pig was derived. Keeping things natural also delivers meat with the finest flavour and texture. ORDERING YOUR WHOLE SUCKLING PIG You do not need to be a master chef to create a dish to die for when you use one of our prime piglets. Each one will arrive at your door ready to roast in the oven, allowing you to relax and look forward to the feast ahead. You will receive one frozen whole suckling pig, delivered on ice pads. If you are not using it straight away, store in the freezer. If you are, then you will need to thaw it in the fridge for at least 24 hours before cooking. HOW BIG IS THE WHOLE SUCKLING PIG? Each whole suckling pig weighs between 4 and 5 kilos and measures between 45-50cm in length, so don't worry, it will fit in any conventional oven. DEFROSTING YOUR SUCKLING PIG Place your whole suckling pig in the refrigerator to begin the thawing process. After a couple of hours, you will be able to remove the packaging and allow the suckling pig to defrost at a temperature between 2-4º C, for 12 to 24 hours. You can easily roast yours traditionally (Cochinillo asado) in an oven for friends and family, the results will remain the same fantastically flavoursome. Take your whole suckling pig out the refrigerator and pat dry the pig all over to remove any moisture created during the defrosting process. Allow the suckling pig to reach room temperature for 2 hours before cooking. Cook in a pre-heated oven 180°C/350°F/Gas Mark 4 for 3 hours. SERVING YOUR SUCKLING PIG Serve your roasted suckling pig with a glass of quality red wine, such as our Valduero Una Cepa from Ribera del Duero, some roast potatoes, seasonal vegetables and make some real gravy with some stock and scrapping the pan juices created during roasting. Exceptional Customer Service, over and above the expected. Contacted Basco on PM 03 Jan, the Bank Holiday after New Year. I utilised the Chat Function directly from the webpage, communicated directly with their representative Steve who was absolutely fantastic, helpful and polite. I required a Suckling Pig to cook on the 7th Jan. He talked me through the ordering process, and promised that the order would be processed immediately and dispatched the next morning. All steps in the process were followed up by conformation Email. The representative even dispatched as Free Shipping instead of paying for priority delivery, another saving i appreciated. Last but by no means least, the product arrived promptly and was of superb quality. the finished article was succulent tasty and what i would consider to be tremendous value for money. I BBQ’d the little critter much to the horror of my family.......until supper time when I produced a golden suckling pig the aromas of which percolated through the house and assembled the family. The general consensus was it was delectable, succulent, beautifully flavoured by the kettle bbq and utterly moreish. So much so that a 5.5kg pig lasted only 2 days in a family of 4 adults. Excellent service & delivery in a well frozen polystyrene freezer, superb value for money and by common family consent despite initial resistance, to be repeated again and again. Highly recommended product and outcome.
