Caviar Nacarii sturgeon grows naturally and sustainably in the clear waters of the River Garona, in the heart of the Val d’Aran. The purity of the water coming from the snowmelt of the Pyrenees and an incomparable natural setting give Caviar Nacarii its quality and transparency of flavour. Caviar Nacarii only sells fresh caviar that is never pasteurised. This is why they have a live product that evolves with age, and is rich in nuances and source of varied sensations, depending on the maturity. Their traditional range of caviar has the excellence of flavour that the brand Caviar Nacarii stands by. The size of the roe is that of the standard Siberian sturgeon, with a diameter of between 2.5 and 3 millimetres. The caviar is obtained from Siberian sturgeon (Acipenser baerii) through 2 extractions per year in spring and autumn, following the natural cycles of the female sturgeon.
